A $15 non-refundable deposit is due at the time of registration. This is to hold your seat as this event will sell out. This will be deducted from the $75 fee the night of the dinner.

5:30 – 6:15 PM Exclusive Tasting with the Hawk Ridge Winemaker, Maureen MacDonald, in the Bar of Sage & Salt
Enjoy a selection of sweet and savory amuse-bouche with our featured wines:
• Momma Hawk Chardonnay - Toasted hazelnuts, vanilla, sweet apples, fresh churned butter
• Western CT Highlands White (Seyval Blanc / Cayuga) - Dry, with notes of lemon zest, immature mango, tart pineapple
• Hawk’s Eye White (Pinot Grigio) - Dry, bright citrus, mouthwatering acidity, soft mineral finish
• Western CT Highlands Rosé (St. Croix / Jupiter) - Dry, floral notes of rosehip & hibiscus, raspberry sorbet, strawberry jam
• Nighthawk’s Watch (Pinot Noir) - Dry, raspberry, fresh earth, mushroom, forest floor, vanilla, subtle spice

First Course: Vegetable Napolean - Prosciutto, goat cheese, artichoke vinaigrette
Paired with: MoHawk Sauvignon Blanc-Dry, voluminous aromas of white grapefruit, gooseberries, lime zest, crisp finish
Second Course: Seared Scallops - Bacon, brussels sprouts, smoked salmon dill cream, sweet potato hay
Paired with: All Day Rosé(Barbera)-Dry, strawberry rhubarb aroma, touches of cranberry, blackberry, watermelon
